The Roman method of preparing new potatoes used caraway seeds, which are also considered a beneficial and healthful herb.
Combine:
1 teaspoon Caraway seeds
1/4 cup butter
1 cup white wine
1 cup sour cream
1 tablespoon fresh parsley, minced
Directions:
Saute caraway seeds in the butter
Add the wine and bring to a boil; allow to simmer uncovered for 5 minutes.
Gradually add the sour cream 1 tablespoon at a time, stirring constantly.
Add the parsley and the sauce; pour over 10 boiled or baked potatoes.
